Roasted vegetables pasta ????[zucchini, eggplants, red bell peppers and tomatoes] I could eat pasta every day ???? By @lea.bowls.your.mind ~ Ingredients: For 500g spaghetti Oven baked vegetables: 1 small eggplant, diced 1 zucchini, diced 1 red pepper, diced 2 hands full of vine tomatoes 3-4 tbsp oil Salt, pepper, paprika sweet, dried: rosemary, parsley, thyme, oregano and a pinch of cinnamon For the sauce: 1 garlic clove, chopped 400g passed tomatoes 4 tbsp oil Salt, pepper, chilli, paprika sweet, dried: basil, rosemary and thyme 1. Preheat oven at 180 degrees. 1. Put the diced vegetables into a bowl, add 4 tbsp of oil, mix and then add the spices and mix well again. [You can also put it into zsm, but I like to split it because it distributes it more evenly.] 2. Put the vegetables into a suitable shape and bake for 35-40 minutes. 3.Slightly fry the garlic in a saucepan in a little oil, add the tomatoes, add 4 tablespoons of oil and season with salt, pepper, chili, paprika, rosemary and thyme. 4. Simmer for 20 minutes at medium heat. 5. Honey Lime Rainbow Fruit Salad ???????? ???? ???? ???? by @cookingclassy . My favorite fruit salad! Perfectly right and refreshing with a beautiful combination of colors. This is the perfect summer side dish for cookouts or holiday parties. You can switch of the fruits listed here for others you may have on hand. . Ingredients 1 lb fresh strawberries, chopped 1 lb chopped fresh pineapple, 12 oz fresh blueberries 12 oz red grapes, sliced into halves 4 kiwis, peeled and chopped 3 mandarin oranges* 2 bananas, sliced (optional) Honey Lime Dressing 1/4 cup honey 2 tsp lime zest (zest of 2 medium limes) 1 1/2 Tbsp fresh lime juice . Instructions Add all fruit to a large mixing bowl. In a small mixing bowl, whisk together they honey, lime zest and lime juice. Pour over fruit and toss to evenly coat, serve immediately**. Recipe Notes *1 (15 oz) can mandarin oranges in juice or light syrup, drained well will work here too (which was what was previously listed, I just now prefer the fresh). **Fruit can be chopped 1 day in advance (except banana) and dressing can be made 1 day in advance and kept separate and chilled, toss together just before serving.
